Word for word video transcript

Hey everyone, Brandon Nelson and in one minute I'm going to show you my turmeric and lime chicken and veggie recipe. Let's start with a little bit of olive oil in the pan. I like chicken thighs because there's just so much good fat in there. Then let's fire up a second burner and get a walk nice and hot. First thing that's going into the walk is a nice yellow onion. The next thing we're going to add is a cauliflower. Give our onions another toss. And then we're going to add all that cauliflower right in there. Okay, while that's cooking, back to the cutting board. Couple heads of broccoli. All right, the chicken's finishing. The veggies are now done. Now, I'm going to hit the spice rack and I'm going to grab that turmeric. Now, our chicken is done as well. So, let's go ahead and add that in there. At this stage, stop and give it a taste test. I mean, it needs salt and honestly, it needs more olive oil. So, doctor it accordingly and get it exactly how you like it. You already know I'll eat this in a piece of chapati like a taco, but I also love it in a bowl. Sometimes I'll put a dollop of butter or ghee or a fistful of cheese in there and then mix it around. I like the lime as a finish squeezed on right before you eat it. Okay, if you've made this a bunch of times, like four nights a week, and your family is just exhausted, here's what you can do to make it interesting. Get a giant pot and then transfer your mix. While that's warming up, we're going to peel and dice. Then we are just going to boil those sweet potatoes to soften them up. We're going to add another veggie to our mix and that is some collared greens. But next we are going to add two quarts of chicken broth. Now we're going to add those collared greens. Just going to add those sweet potatoes in there. I'm going to go back to the spice rack to the cumin and coriander. We're going to add one more magic ingredient. Yes, coconut cream. And then watch how we finish it. First, fresh cilantro. Then here comes the lime. Get a couple lime wedges on there. And then last thing, goat cheese. This has been Brandon Nelson for 1 minute. I'll see you next time.
